Shakshuka

A colourful one-pan dish of eggs gently poached in a rich, spiced sauce of tomatoes, peppers, garlic and onions. Shakshuka has its roots in North African cuisine, particularly Tunisia, and has become a beloved dish throughout the Mediterranean and Middle East. The name means 'a mixture' in Maghrebi Arabic, which pretty much sums it up. Simple ingredients, one pan and plenty of flavour.
